    <title>Super Tasty Spicy Chicken And Noodle Salad</title>
    <description> 70g chunky or smooth peanut butter    20ml Kikkoman soy sauce    3 tbsp lime juice    1 tsp caster sugar    3 tbsp toasted sesame oil    1 Thai chilli (or to taste), finely chopped     clove of garlic, finely chopped    2 cooked chicken breasts, skinned     For the noodle salad   1 red pepper, quartered and seeded     cucumber, peeled    1 large carrot, peeled    2 spring onions, trimmed    Large handful of coriander leaves    125g rice noodles    2 tsp Thai fish sauce     Begin by making the peanut sauce. Place the peanut butter, soy sauce, 1 tbsp of the lime juice, caster sugar, 1 tbsp toasted sesame oil, chilli and garlic into a food processor with 3 tbsp cold water. Puree and pour into a bowl. Finely shred the chicken breasts and mix into the dressing. Set aside. Finely slice the red pepper, cucumber, carrot and spring onions. Place in a large mixing bowl with almost all the coriander leaves.     General chicken is a sweet and spicy deep-fried Hunan Chinese dish that is popularly served in American and Canadian Chinese restaurants. The origins of the dish are unclear. The dish was previously largely unknown in China and other lands home to the Chinese diaspora.    Prepare the rice noodles according to the instructions on the packet. Drain and mix into the vegetables. Mix the remaining 2 tbsp lime juice and 2 tbsp toasted sesame oil with the fish sauce. Pour over the noodle salad. Divide the noodles between two plates.     <title>Baked Chicken Steamed Broccoli And Potatoes</title>
    <description> 6 chicken breasts (either bone in or halves with skin on)     1 tsp dried thyme    Olive oil    6 large Portobello mushrooms (or enough smaller mushrooms to cover the bottom of the baking pan)    1 tbsp minced garlic    Salt and pepper to taste    2 cups dry white wine or dry vermouth    14 cup fresh chopped parsley    Place rack in center of oven and preheat to 400 degrees. Into a lightly oiled baking pan, large enough to hold chicken breasts, arrange mushrooms gill side down. Sprinkle with minced garlic, salt and pepper. Pour wine over mushrooms. Place chicken breasts skin side up over mushrooms and brush with olive oil.    Bake uncovered about 20 minutes, until the breasts are golden brown. If the wine has evaporated during the cooking process, add a little more (for those of you who can&#039;t tolerate alcohol, keep in mind that it burns off during the cooking process, leaving only the flavor). Baste the breasts with the pan juices and turn over. Cook until breasts are completely done and springy t o the finger, about 15 minutes more.    With a slotted spoon, place the chicken and mushrooms on a platter, mushrooms on the bottom and breasts on top, skin side up. Skim off excess fat and spoon juices over the chicken. Sprinkle with parsley. Serve with steamed broccoli and boiled new potatoes. (Substitute brown rice for potatoes, if desired). Garnish with chopped parsley.     <title>Vegetable And Chicken Noodles</title>
    <description>Ingredients:       2 tbs vegetable oil       14 cup (60ml) hot chilli sauce       14 cup (60ml) soy sauce, plus extra to serve       2 (about 200g each) skinless chicken breast fillets, thinly sliced       450g packet fresh thin hokkein noodles       400g packet fresh stir-fry Vegetables       75g chopped roasted peanuts    Method:       1. Place 1 tablespoon oil, chilli sauce, soy sauce and chicken in a bowl, then toss to coat chicken.     2. Separate the hokkien noodles by gently shaking loose.     3. Heat the remaining oil in a wok or deep frypan over high heat. Drain the chicken over a bowl and reserve the marinade. When the oil is hot, add the chicken and stir-fry for 5 minutes or until lightly golden.     4. Add the stir-fry vegetables, hokkien noodles, reserved marinade and 1-2 tablespoons water, then stir-fry for 3-4 minutes until the vegetables are cooked but still crunchy.     5. Add the roasted peanuts, then toss to combine. Divide the mixture among 4 serving bowls and drizzle with extra soy sauce.    Successful vegetable gardens are not accidental.     <description>Ingredients: -       40 mls Echidna Prickle (Mild Chilli Honey Mustard Dressing, 1  10)       3 tbs Sweet Dreams (Medium Chilli Jam, 5  10)       4 medium chicken breasts, skin on       Salt and freshly ground black pepper       2 sticks celery, chopped       2 spring onions, chopped       2 papayas       100g button mushrooms, sliced       4 spring onions, trimmed and cut on the diagonal    For the dressing: -        40ml Echidna Prickle (Honey Mustard Dressing)       Juice of a lemon       1 tablespoon white wine vinegar       2 tablespoons lemon olive oil       3 tablespoons Sweet Heat (Chilli Jam)       2 tablespoons fresh mint, finely chopped       Salt and freshly ground black pepper       Mint sprigs for decoration    Preparation    I. Season the chicken breasts and place them in a pan with the celery and spring onions. And cover it all with water. Bring it to bubbling, then turn the heat down to simmer for 2 minutes. Cover the pan with a lid and turn off the heat. Leave the chicken to cool in the liquid.    II. Remove the cooled chicken from the liquid, then take the skin off and discard it. Slice the chicken thinly and put in a bowl. Peel, de-seed and slice the papayas and add to the chicken. Add the sliced mushrooms and spring onions.    III. For the dressing, place the Echidna Prickle (Honey Mustard Dressing) in a bowl and stir in the lemon juice and white wine vinegar. Whisk in the lemon oil and add the Sweet Heat, and mint. Season with salt and freshly ground black pepper. Then pour the dressing over the chicken and mix and toss it well. Serve immediately, decorated with mint sprigs. The one below is my very own and a favorite in my house especially with kids.Combine all the ingredients mentioned for making the balls with the exception of oil.  Heat the oil in a frying pan.  Make 16 small lemon-sized balls of this mixture, squeezing out excess water to prevent breakage.  Deep fry the balls a few at a time.  Drain when golden brown and cooked. For the sauce-  Heat 4 tablespoons of oil in a pan. Add the ginger, garlic and green chilies.  Fry over a medium flame for 1 minute.  Add the Soya sauce, chili sauce, pepper, sugar, ajinomoto, stock and salt. Bring to a boil.  Add the fried balls and cook covered on low heat for about 3 minutes.  Add the cornflour mixed with water and stir continuously, so that the sauce become thick. Garnish with spring onion tops.  Serve with rice or noodles.     <description>To keep the egg flakes afloat, the soup must be thickened with cornstarch first before the beaten eggs are stirred in. Bring soup stock to a boil. Slowly pour in the cornstarch mixture while stirring the stock, until the stock thickens. Reduce heat so stock just simmers. Pour in the eggs slowly while stirring the soup.
